Whisky Thief transforms into Suntory Bar — a limited-time pop-up bar for three months.

Spanning two levels, it becomes Sydney’s go-to for Nomikai, Japan’s post-work Highball ritual. Celebrate over 125 years of Japan’s most iconic drinks house with signature highballs, inventive cocktails, chef-led bar snacks, and a lineup of world-class guest chef and bartender takeovers.

Launching 8 August, the season begins with a Suntory Highball + Snack collaboration by Tetsuya Wakuda and Derek Kim (Head Chef of Garaku at Prefecture 48) — offering Australians the first opportunity to experience the culinary artistry of Tetsuya since the closure of his iconic namesake restaurant.

Behind the bar, explore an elevated drinks list featuring the smoky Hakushu Highball, Haku Vodka Martini, Roku Gin G&T, and Hakushu Manhattan, alongside Laphroaig Penicillin, Maker’s Mark Gold Rush, and the cult-favourite Boss Coffee twist — all reimagined for bar service.
